I was thinking to change Sheridan or Fichev for a good inf general since I have many cav generals and only 2 inf generals: Zhekov and Falkenhayn. I also want to buy Falkenhausen when I replace those two, but is it really worth it replacing them or is there a better inf general I could buy for money available in campaign 3? Just aim for Straußenburg directly. He's quite a good buy.
Sheridan has his value, but he would be outshone by his betters in the cav class. If you have no need for a 3rd or 4th cav gen, stop investing in him.

Unless you have a large plan for Sheridan and Fischer, and depending on how far you are into the game (assuming campaign 3) you should use Jackson primarily and Molke (the Elder) secondarily. I would sell Sheridan and Fischer and get MacArthur because Zhekov is quite good and Falkenhayn is pretty bad. Once you save up enough for Straussenburg, get him and then go for Ivanov/Beseler. Beseler if you can afford to change some skills and Ivanov if you need the damage. And don't forget to buy Sheridan again from the store because he is free. Sell Falkenhayn and depending on your needs upgrade tech, upgrade generals, buy items, or spend it on another general. Do not do the latter without consulting a second opinion, as you will lose 15% or so of the cash that you bought a general with. And if you are planning to do some very hard challenge conquests, only upgrade attack and mobility tech. Also, if you want to save cash and gold medals, only upgrade rank to Major General, or as the game calls them, M General.

Save for Lee. You only need to invest 5 textbooks in him, and he is OP. Only problem is price.

All three are best in one criteria Ivanov- Damage Beseler- mobility( if investing five textbooks otherwise no match to Ivanov) Hindenburg- Defense

Storm Fortifications, 3. Plain Fighting, 4. Tactics Master, 5. Arty Commander, because apparently it works on his unit as well, so that's good.

Arty commander is almost useless on Artillery General because a general is enough for cracking cities. Jungle fighting is way better than plain fighting Tactic Master is not boosting your damage Storm Fortifications only work for cities and in campaign you also have to deal with Armoured Units especially on western front.

Also these skills are of your Beseler and you have ruined him by removing a good skill named Mountain Fighting for a mediocre skill named arty commander.
