So my Chinese phones are both using old versions of Android (7 & 9) and don't seem able to update in the normal way. It seems that it may be possible using some kind of dark arts (I've unlocked developer mode but that's it so far), but is it worth it or should I just get a new phone with the latest version instead? Sorry, I know this isn't anything to do with modding but I figured the inhabitants of this board were the most likely to know about this kind of technical stuff

Upgrading the OS is only a question for new high-end phones - if existing. Use your phones as long as they work sufficient for you. Only when you see that you get performance or compatibility problems you should migrate. If you buy your next phone 3 months later, you will have a 3 monts newer device - time is on your side. As much as I know, is Android 7 still sufficient. Developers Mode is strongly recommended, if You know what you are doing.

Thanks, I've since found out that even if I could pull it off I'd lose everything in the phone so I'll probably just see if there's a suitable one with Android 12, which is apparently due out soon.

Most mods should work fine with Android 7 or 8. It is Android 10 and up old games stop working. All you need is a phone with ram and a good sd card. Full screen is a good solution for some problems but not all. Game driver and turn off animations can speed up your game as well. If your device is rooted, you can use SWAP files to create artificial ram in your SD card. We can go even further by "splitting" your SD card.
