Yeah two gems are the reason why I grind for them in the territory shop, but I wonder if it is worth it to buy them medal-bought eagle coins. Otherwise it is so grindy.
But maybe medals are better used for discounted scrolls...

Fwiw I now use medals to buy the hard to get units. Tempted to buy the coins for territory shop with medals too but I figure coins will keep coming as well and once all weapons have been bought coins will have little use (just for gems and units once in a while but normal coin income should more than cover)…

You definitely won't get more than you can spend. The shop resets every 6 hour and there is always lots of gems, units and war gear to buy. And it takes very long to buy every item, even just the golden ones, especially if more comes with updates (last one just added 3 more golden items).
I once counted that you can roughly get around 1000 eagle coins in a month without buying them (and if you have saladin = bonus 5 per day and easy access to last seasonal reward). That means that roughly you can get 3 golden items per month. At least for newer players like me, it is a long way.
