I've done every conquest that provides literature and for industrial I've done Russia, Egypt, and India I have done most of the conquests I think during my time playing EW5. I have missed some of the harder ones though like Persia in Empire Age, etc. Persia was always a fun one to grind. Loved duking it out with the Mongols. I tend to like playing small countries next to massive countries. A big boost in the early game when you beat them. You should try Korea in Empire  that was quite a joy ride |

Then again, I probably used Gunpowder or Industrial Age gens by then. I beat it with discovery (persia empire) but I made sure that my INFANTRY general was the only one that could invade Asia. So it seemed pretty far (note: Richard just barely managed to fend off Genghis bc of rumor luck) |

Discovery: nobunga
Gunpowder: going for richard or nobunga again maybe. Not decided much.
Industrial: north America
And earlier runs i remember one run where i did with all countries and all ages just to note down which country has which special unit and which no name gens have which abilities.
