If I steal cities, factories and staples from allies throughout conquests, is it going to somehow decrease my overall chance of getting a princess?

Absolutely not. Stealing resources you need can help,but don't overdo it and turn your allies neutral or against you that won't be good.
I generally try not steal cities, farms are fair game tho. You can get away doing it once for sure,they will fuss about it though (;

What's the max amount of cities you can steal before the ally turns? Is it based on the amount of turns in between the steal?

I think two makes your ally neutral, and three makes them your enemy. I could be wrong, and it might depend on what country it is.

it depends of the alliance you have with the country. I save and try, until know the rules.

It takes 2-4 Production Things excluding Farms to be taken to make your enemy neutral. It is chance, in some lazy fun conquests where I turn on an ally I save before being at an empty one take, reload save capture until it turns neutral so yeah chance

I had to steal from Prussia 5 times in Europe 1806 as Russia to make it Neutral, though not at one round. I just got to know that Prussians are kind It was frustrating though

The reaction of your allies is somehow random, you always should save before stealing - on another try the reaction can be different. I think: - Stealing the capital has a higher risk - shorter intervals have a higher risk, - fighting a threat of your ally makes a negative reaction more unlikely. I can´t proove this, but imo fighting with your ally make them more tolerant to my stealings.Yes, the famous Prussian kindness and easygoing, lol. - 😆
