I once tried it with Mexico and captured the island Japan but not Japan at China and south east Asia. How can I overcome all of Japan's paratroopers?

I recommend Japan if you want to play as axis, Germany can be fun too. I also like Italy because you don't have to fight against a billion Russian heavy tanks and field artilleries. As allies, GB is good, Egypt is surprisingly easy, India even easier, and there's a very good guide for ROC 1943 from António Salazar .

Japan and Germany are of course top axis picks. Allies is GB all the way. Montgomery can dominate Africa and Italy while you have a couple of generals already in Asia to fight Japan.

Generals like Mountbatten you mean? Yes,GB is a great 1943 country to play as, there's a record for world conquest and it is GB 1943 so that's a top pick for rushing

But if you are determined to play as Maxico and want to defeat Japan, you need to focus your attack on cities that have lv2+ airfield to stop the para-spamming. You may start your offense at Shanghai and build your beachhead there. Since you can attack Shanghai from the sea, the paratroopers won't be much trouble. If the paratroopers are not on your way, you can just ignore them and focus on taking cites.

If you don't mind having a long conquest, Egypt 1943 is recommended. I finished in 120 turns with crappy generals but only because I didn't know you don't have to conquer neutral countries and Japan kep spamming paratroopers in India

Mongolia is fun, but you must be lucky in order to have a chance.

I find Mexico with a ion cannon easy because you can weaken Blamey 2.0 in Tokyo allowing America to take it and dominate Asia.

I found Australia really easy. Between you and USA, Japan is easy to take down. Just got all the annoying paraspam to deal with. After Japan is down, its the long trek across Asia, and if you're lucky, USSR will still be alive and fighting Italy. If you go take Finland and attack from the north, it usually cleans up pretty nice by round 80.

For me, 1943 is easy with Brazil and Bulgaria. Just spam artillery and motorized infantry.
