The addition of UN would be interesting but isn't it an issue of it being like, let's say Russia is at war with NATO but they have "sent troops to the UN" they aren't hostile to them, just to NATO. that would be kinda funky but I like the idea of it

Yes... U.N is a neutral organization, it is impossible that they are allied with USA. Moreover Russia and China are part of the security council...
