I can't get through this mission because I always get reked by the arty spam of the other French. Any guides pls Attack clockwise. First, attack the central city, then attack the SW target city. If the enemy is spamming arty, send your best men to capture and hold the factory while you quickly take out the SW city. Taking this city gives the enemy a 1X morale drop, use this to overpower nearby enemies. Then, push northward to Paris. Taking Paris confuses the enemy for 2 turns, which you can use to clear out the spammed cav attacking your central city. Lastly, head east to destroy the last major fort and capture the last city to immediately win.

I have Murat with two item slots. Massena with one item slot. and Alexander the 1st with 2 item slots. I have 2 Ambulances, 2 tents, 1 cavalry pistol, 1 Ferguson Rifle, and 1 what ever the thing is called (Artillery attack booster by 25 points, and 10 battle ability). So... what should I equip on my generals?

Use Ferguson Rifle and 1X ambulance on Messena, Cav pistol and 1X ambulance on Murat, Arty telescope and 1X tent on Alenxander, and the rest for whoever is left.

Also, should that item setup for my generals be used everywhere else too? Like campaigns and conquest?

In certain Challenges/Campaigns where it is impossible to deploy all your good gens, you will know when you need to switch equipment up if need be. You'll have to be the judge and make the choice.
