I saw Canada 1943 marked as easy in one of the Conquest related threads so I gave this 2*country a try. Unfortunetely, they don't have a city with a tier 3 industry. But we are not going to rely on local production since we need to help our allies both in the Atlantic and Pacific.
For this, Crerar and the other east coast units (accompanied by 4-5 subs) will be sent to England. There, the Germans bombard London with missiles from Cologne. Once the British don't reproduce we'll take the capital as our main base of operations. It is also very important to steal one of the British ports in order to keep a steady stream of subs and cruisers patrolling/blocking the English Channel. On this front I stayed quite passive and only moved to France at technology level 6 so I could spam double/triple stacked heavy tanks in any captured city.
At the same time, Simonds and the west coast units board their transports asap and move to the Bering Sea/north of Japan, again accompanied by ~3 subs. Here Simonds himself moves on to the former Russian now Japanese lands titled as "Far East". Capturing both Russian ports will help shortening supply lines as the main target here is Japan. Together with destroyers/cruisers (who took the northern Japanese port), one of the land units (motorized inf or medium tank) should be able to take Sapporo. Then we advance south to Tokyo with subs and cuisers on both sides on the islands softening up their navy and coastal defences.
In the first rounds, most of the resources are spent to build Lv1 Institutes and Lv1 Factories (for missile spam later). Then, Japanese front gets the highest priorty while Siberia/Manchuria and English Cannel/North Sea are only meant to hold their ground. In the meantime, the Germans and their allies are advancing East and are conquering the whole African continent.
Every sub/cruiser that can be spared in the English Channel is sent to help the Americans successfully land in Spain and later to conquer the Mediterranean ports. Once Japan, Korea and maybe a few Chinese cities are taken back, our technology level should hit Lv 7 and we'll use the saved up resources to eliminate the German/Bulgarian/Romanian/Italian/... offensive (especially their generals). The remnants of our fleet will help secure all the ports along the Asian coast line.
With missiles and an income of 1500 - 2000 gold per turn it should be possible to march westwards (from the Far East) with Simonds in multiple groups (north, upper center, lower center, south/coast). After taking Mumbai, the southern group is heading towards Mogadishu via the Arabian Sea. At this stage of the game it should also be possible to conquer French cities via missiles/paratroopers and hold them for one turn to reinforce after that.
There are only a few enemy troops in Africa that's why it can be taken mostly by missiles/paratroopers. The last grinding battles involving lots of heavy tanks took place in Germany, Italy, Poland and in the Balkan states.

Simonds made it to Khabarovsk under the protection of Nimitz on a cruiser and stole it back from Japan. I took back the English Channel by taking the port in Ireland and building subs. Simonds and some howitzers took Shenyang, then with the Chinese took Peking. After taking Hong Kong and Hanoi, I built a triple stacked heavy in Peking and threw Guderian on it. Konev and Rommel soon followed. Alas, the Romanians took Astana while Hungary took Novosibirsk and surrounding cities. Guderian and Rommel went off to deal with the Hungarians while konev lagged behind and killed Graziani. Hit tech level 7; even with missiles the spam was annoying. Once they were dealt with, I sent Rommel to liberate Moscow and Guderian and konev to Stalingrad. Needless to say, Guderian and konev died before Stalingrad fell. I took Warsaw and built a wall of bunkers from the Baltic Sea to Bulgaria. The Germans crashed and burned. The Italians also failed to breach, and a missile spam ended European Germany, Spain and Italy. Built silo in Palermo, took Tripoli, and 3 turns later had Africa liberated. The Americans took the marseille port and ended the conquest on turn 84.

Even with endgame generals the formidable axis spam from the balkans in both 1939 and 1943 leaves some conquests still very tough, an example would be 1943 Thailand
