Is it doable? Without getting flushed in the first 20 rounds I mean Everything is doable in this game  . The problem is that you have to invade Mexico and Canada, so playing as France is a bit longer than playing as 3* countries on a Coalition side. |

Better to let France rebuild it Grande Armeé as an AI country rather than play it ourselves.
I guess you'll have to conquer the Iberian Peninsula, Scandinavia, Britain, all 3 German states, Egypt, Northwest Africa, Russia & everything in the Americas that is not Brazil or the USA.
If you can defeat Spain in Iberia, Portugal, Spanish Africa, Morocco & the Tribal Union are easy targets.
Conquering Prussia, Bavaria & modern Danish lands should give you a good position to defeat Russia & Austria. The Ottoman Empire & Papal States can help here.
It may be best to let Britain spam ships while ONLY sinking any British expeditionary force.
