I will start this off with campaign sets. It can be anything in game really.
USA campaign : The first campaign we play
Canadian Campaign: Starts hard, ends pretty easy.
French Campaign: Last two missions are insane
HRE campaign: Fighting France and her friends
Russian campaign: Nice break from French campaign
Ottoman campaign: Fourth mission is really annoying
British campaign: Weird, out of order missions
Colombian campaign: The first mission is impossible.
Prussian campaign: Has the biggest time gap
Italian campaign: Theyre all hard missions overall

Also before you guys do Clinton or Verhuell I will do it.
Clinton - Players trick beginners with him
Verhuell - Crap general weird people like.

Prussian War - good luck on first mission
Hundred Days War - hard, but overrated challenge set.
Kutuzov - pretty meh general somehow liked
1812 conquest - You think conquests are easy?
John - strong gen that looks meh
Bagration - Cavalry isn't used for defense.
Lannes - a good infantry price performer
Hood - his challenges are really annoying

Padget: overshadowed by our dear davout
Surovov: the only good useful hybrid
Doebln and oudinot: go back to their hometown
Messena and balcay: new bright popular star general
