Ralyks, the WC4 library recommends Egypt as a one star 1980. If you play your cards right, you can dominate the whole of South America and Africa without much difficulty, and you will be able to focus on two main fronts: Balkans and the Middle East. Which campaigns do you have left? I can help you with those. Tbh IAP generals aren't really good without rumour, and they are more useful in a speedrun where you lose generals rather quickly or there are multiple fronts to tackle.

I made it over the whole campaign, that's what the last picture was showing the "complete all modern war missions in difficult" achievement (along with me saying "I have 810 medals because when you finish the last campaign mission you get 560" (350 of achievement and 210 from getting 3 stars)) Thanks for the tip on Egypt, I'll give it a go, but on my head Spain seemed the best one starter as although you start with similar troops and income as Spain, Africa is way less productive than Europe, where you could also support your many allies there, which is normally good as they will soak up the attacks and damage the enemies so that it was an easier theater to fight on, and also you're very close to Africa, so once you clear southern Spain, you can go over and start pushing there. Turkey seems to start also well, but Istanbul is not on a good spot. Japan is too isolated, Thailand, Cuba and Iraq start too weak, India doesn't look bad tho. Although I wish IAP had a 6th skill which you could choose (not 5 prechosen ones and that's it), I must say that by far Manstein was doing the heavy lifting, my Rommel and Vatutin did little damage because of worse and poorly leveled skills, but at least I could put them some rumor. Guderian and Konev were quite harmful too, but Manstein was the fastest and heaviest hitter, and the one I relied more for cleaning up.
