Pacific is the only one that gave me some challenge, so I voted for it. Also, at Pacific, you unlock Ozawa, the "Gargoyle".

1941 Africa. The mission is not that hard compared to other Theatre.

Eastern Front 1941. Neither hard nor very easy. Just easy-middle. It contains massive amounts of division unlike pacific where you get a little elite army. Naval Battles of pacific were fun aswell.

Western Front. Easy to clear, hard to stage clear, and incredibly hard to perfect clear.

Eastern Front. Easy enough to get through without headaches, hard enough to be a challenge and make perfect clears difficult. Plus, the historical accuracy is outstanding.

African, easy enough not to be a pain, hard enough to be a challenge. Most misssions 100 or 90% on land. You get to make the most of Rommel and Monty.

44 Western Front is, although difficult, very fun in my opinion. It offers a diverse spectrum of missions that you get to experience with. It also gives that late-ww2 vibe especially for the allied side. Battle of the Salient is definitely one of my favorite missions in the entire game so far.
