What should I do if my game data got wiped? My Game Center logged back in, but all my data, including my purchases got deleted.

Unfortunately there's nothing you CAN do. If you have proof of purchase easily available you MIGHT be able to get the company to restore any slots you'd bought, but that's about it. It's a well known pitfall of this game, rare but devastating when it occurs.
On my device, I tracked it down to unexpected shutdowns due to power issues. I had multiple erasures in a row which seem to have been prevented by only playing the game with my tablet (Samsung Android, I should state) plugged into the AC.
