Is Heavy armoured cavalry a f2p unit, and William the Conqueror a f2p general? No they aren't, you get them in achievements for buying 100K and 25K medals respectively. You can get Heavy Armored Cavalry F2P in the recruit thingy.

Are there any negative consequences (in campaigns or maybe conquests) if I decide not to unlock some special units? Frankish axemen, for example, or camel riders?

They'll be weaker if you decide to recruit them at the castles during the campaign but I think it's safe to hold off on unlocking troops you don't intend to use to exchange them for souls of war.
