Here's the problem: your generals.
Joseph is an Econ general without Combat ability.
Elphinstone has nothing going for him.
Get better generals (Sulkowski/Golitsyn/Ney/Dumouriez for Cav, Picton/Dobeln/Hull/Oudinot for Inf, Scharnhorst/Grouchy/Jourdan/Marmont for Art). I'd recommend a Cav guy,who you can use in the France 1798 conquest to get Princess Sophia, who is an awesome Art General. For whichever general you choose, you will need medals, that you can either Farm for or get by restarting your game.

Well in the Chinese forum beating 3 Emperors for 5 stars without generals is considered as beginner skill(while I can only have 4 stars).

And he needs better generals anyhow. I say he should get Golitsyn, a Cav people killer, to compliment Sophia, an Art Fort killer, who Golitsyn can be used to easily unlocked

I cashed out and got Nelson and Jourdan. Will these help? Yes, although Nelson might not be ideal. Keep him anyway. If you are willing to pay more (depending how much) unlock extra slots and get a Cav General

If you are willing to pay more (depending how much) unlock extra slots and get a Cav General Nelson is very good. He has Accurate and Leadership, that makes him able to be on the front line but not afraid of cavalry charging. Jourdan isn't that necessary.

I find Jourdan to be valuable, and his ability in infantry comes in handy in missions with no starting art unit (this one, for example). Good point about Nelson, I think I'll get him next time I have to buy a new Tablet and start Fresh
