That was honestly not at all hard even beginners should get it done with just Mr Belisarius Kingdom of gepids Usually ET conquests are not that hard at all with one notable exception of EW6 1914. They are just a farming ground to get necessary resources or a battleground for speed run competitors

Doing hegemony is much harder bc u got mauri and Avars on two corners of the map.
Plus for some reason near late game some of you powerful allies will declare war on you out of the blue making it super difficult wrestle all of them in a fair amount of time. I tried playing as byzantines and focused on getting to firearms age (for fun to play with muskets and top tier units) but during late game it was pretty difficult to gain hegemony.
Also Justinian got stripped of lobbyist in the conquest so that doesn't help
