I recently acquired Alfred and wanted to try to hire melee Calvary but I do not have an option to hire my squire Calvary which is unlocked, I can only hire charge Calvary, does anyone have some insight on what I may be doing wrong ?

You can only hire mercenaries, they have Tower icon in their cards. You can also look from the handbook. You need 30 enlistments to unlock them.
