I just beat Italy 1939 on A rank with Messe and Leeb, however I‘m worried that S rank with two or one star country might be harder to pull off and the armored assault medal would be very helpful. How much usually do you need for an S rank on two and one star country? Also other than Spain for 2 star, what is the best 1 star nation for S rank?

Around more than 120k for S rank. Finland is the best one star country along with Bulgaria. The points depends on how fast you complete the conquest but I think the turn requirements for the S rank is higher if you are playing a minor power.

I got an A playing with Germany 1939 (I'm not new, just lacking of Industry for Missiles that's why I finished it a bit late...) My score is 140k + (I forgot the exact score hehe) I finished it at turn 87 and wondered.. "Why did I got an A... In Finland I got S completing it at turn 85" So thats why... P.S. Do you know what are the exact turns to get S, A for 3*, 2* and 1* countries?

It depends on the year, cities conquered and the number of generals used (atleast in some games) beside the turn count.

Do you know what are the exact turns to get S, A for 3*, 2* and 1* countries? There's no exact turns. It's dependent on cities and turns. Grab more cities in as little turns and you'll do good. But don't bother with cities that are neutral. Best way to have industry is to spend as little as possible up until level 7 when you can build your silos. I usually have 7-9000 saved by the time i hit level 7. Which I use on the US, Canada and Australia. There's also a landmark that reduces the cost of launching missiles, I don't know if you have it unlocked but that would help you. It's called Space Center. I believe landmarks are unlocked by completing exercises in domination. Good luck!
