I was wondering how to stop the decently size Hun army, as I'm on a really good Anglo-Saxon run (Short Conquest victory at turn 17) but don't know how to stop the Huns from eventually invading me, all while I want to snag some Roman territory before I'm border locked. Have any tips?

If you have a/some decently leveled up good general(s) spawned in, then it should be a piece of cake because the Hunnic army is ~Level 2. Charge cavalry can swiftly deal with stacks when they charge.

I just started playing not too long ago (was still playing EW6) so I don't have too many good generals but I have good units stacked onto them. Is that good enough?

Have any tips? They have a fairly big army to start because they have had zero attrition up to that point, but luckily their income is low. If you can survive the first onslaught then you will eventually beat them quite easily. A decent general on triple charge cav with a lvl 1 med tent can take out multiple units per turn while staying healthy. Support him with a general that has the heal skill and a few units can do heavy work. Roland or Alfred are the best f2p options for this role. Alternatively an archer gen can also be a pure defensive option. Remember to recruit your best generals on mercenaries from castles. You can have a ton of generals deployed.

I basically kept my army size as low as possible so I would have sufficient funds to raise a large army when the Hun invasion actually comes. Just Spam units to counter the enemy and use your generals as mobile reserves, while your infantry holds the line. As you get better at dealing with them, only spamming troops are necessary. Just have your generals conquer more territory from other nations.

The thing is they look tough at first but they aren't really much of a threat if you play your cards right. So, with decent generals and a bit of thinking it's just free cities. So I could probably multitask and send a bit of forces to take out some of the Roman cites.

You can build a human wall to block their advance and grind their forces, and use your generals to punch holes into their lines and rush into them. I used this strategy for my Franks conquest, not the best for a speedrun (obviously).

1: to kill the Hun army, recruit War Axe Calvary and put Gens there. this will easily outrun Calvary Archers units but stay away from Generals.
2: to kill the enemy generals let them enter your territory and spam troops to defeat him.

In your starting territory, the first three cities act as lines of defences. The city bordering the former Salient Franks' territory is the last line. Its garrison should wipe out any surviving Hunnic force there.
At Hamburg, you can rotate between one garrison by the city and another inside.
Just defend these cities.
The rest of your forces in Salient Frank territory and west of it should keep advancing against Rome.
Continue to upgrade your cities, whenever possible.
Once the initial onslaught dies down, retake the Frankish lands and attack Bradenburg from Hamburg.
