Well, I use Chain the Beast scenario. It really take more time to prepare, but the point is you can get the infantry unit there without a general, and save.
From this point you can use any general. Even without any movement stars or War Horse, because every infantry unit has built-in Geography, the unit is able to reach all three fields.
And when you buy and equip the Crown (found in HRE campaign - Austro-Turkish war scenario - from the start in Vienna), there is 2,4 Nobility points from one move (12 points for 5 moves). You can reach lvl 10 Nobility for any general in 20 minutes or so. (And then sell the Crown, as it is useless...)

Normally your general should have a war horse anyhow and I actually found this by accident. I didn't even know of the one in Chain the Beast

There is actually a better way to farm nobility than doing the one in Chain the Beast with 3 farms in the lower left. That just takes too much time. I made my own: First you pick Austria 1815, you could take anyone else but Austria is the closest to the location. You see your armored car? Put whatever general you want upgraded on it (make sure they are fast or have a war horse because by turn 4 the Ottomans will steal the land) Have you general like this, I used Berthier. Now just move him to the last farm and then press the reset button (the one that brings him back in the lower left corner) and do that over and over and over again. It will increase the general's nobility. I went from a level Berthier to a Level 8.5 Berthier today using this tactic what do you mean by last farm?

this is pretty much the best way to farm nobility, better than chain the beast imo. You should have warhorse so any general on the armored car should be able to move enough hexes to reach the farms.
