When transferring units to their evolved form. Do I get to use both or am I limited to the transferred unit?

you can use both.
the thing i keep forgetting is if the transfered unit alone without the original form gets the unique unit dmg of the weapon when deployed.

And you also keep the level upgrade of the units and even level them up regardless of what transfer unit you choose.

Only disadvantage: Upgrading transferred units gives a little less PoS points than their normal counterparts.

So you guys are saying the transfer is worth it? I have been contemplating the move on my templars (lvl 15) my highest ranking melee cav is lvl 9 (teutonics).

As far as i know it only costs you the one time cost of recruitment orders and merc orders. So all in all yes it is probably worth it to do it as you do not loose anything permanently.
That being said the cost for templars, or long bow men for instance, is quite steep. I did royal swordsman and I like it. I got them to a fairly high upgrade level (soon levl 12) fairly easily as you get them from rec orders and can buy them in the shop. I put them on cnut and robert and I think they are doing a good job, giving +35% dmg when highest morale (works well with war drums and/or with good morale boosting gens) and they are quite tanky with good def.
Not sure I will do fire longbowmen, not sure their special ability and stats are that game changing and I hate having fire everywhere, it makes things messy to place other gens.
As for templars, my templars are still relatively low lvl (I focus on jet black for now) and I dont have richard. Looking at their special ability I am not sure it is worth even the one time high cost. Others might have different view but I do not see how they can be used as a game changer.

Last time I tried, Templar Sergeant didn't convince me. They are still counted as charge cav (melee cav expert didn't apply as well as other boni), so you can work with their weapon type (changed to sword), charge cav expert and cav tactician. This makes them a hybrid rather than pure melee cav as one might have hoped.
I can't think of good examples where this unit is preferred over either a pure melee cav or normal Templars.
