What's the exact step, troop lvl and Yamamoto's set up to win?
Sometimes the cav garrisons are lured out, sometimes, they stay. There's no Baldwin IV to swap places and troops are permanently crippled.

I’m not going into that much detail here since the level is a bit inconsistent and the details don’t matter that much anyway.
Kansuke should just get whatever good infantry gear you have and probably the swordmaster. He has to have a horse that ignores interrupt though, and a healing item helps with surviving a little too.
Everyone has to make for the exit. You should slowly sac the guys in the back so Shingen can get out. The guy who starts off wounded doesn’t have crippled mobility so he should make it ahead of Shingen and keep his path out open. The key here is to time Furinkazan to give Shingen and as many of your guys the ability to ignore interrupt. Just try it a couple times and you’ll probably make it.

…or… you can forget everything I said and stuff everyone in food. That option is available, and it’s technically worth doing over trying it like 3-4 times. Unsatifying as it is to do that.

Hmm, the thing is, Shingen gets paralyzed by the bodies of enemy troops around turns 7-8 and his morale collapses at this point right before the final line of enemy cav. Even if he has food, he wouldn't survive. Of course, if you meant the escorts, perhaps they may help.

Actually having thought about it, Kansuke on Destroyer of Provinces might be a cool idea. I haven’t tried it, but I noticed that Shingen’s deterrence caused every unit affected by the AoE to get stunned. Might be worth trying.

Actually having thought about it, Kansuke on Destroyer of Provinces might be a cool idea. I haven’t tried it, but I noticed that Shingen’s deterrence caused every unit affected by the AoE to get stunned. Might be worth trying. Shingen's mysterious deterrence works if he attacks though. Lvl 1 Shingen with lvl 1 set on lvl 10 units (looks like it follows player lvls for player troops) can't do much.
Edit: Cleared this with 2 small food and 3-4 large ones as well as Yamamoto Kansuke with lvl 10 Sword Master on top of Honda Tadakatsu's Horse (max lvl) and Ii Naotora's sword (max lvl). Really, the food was the saviour. Somehow, the rightmost cav unit attacked Shingen and he was not ready to move. Not sure if the status effect ends at Turn 9-11, or when the last line is broken through, but thanks to Kansuke opening a path, Shingen lived.
If this is really only winnable by the use of food, it's a let down. If Shingen had 9 mobility out of the 12, he could've escaped much more easily. Limited everyone else to 8 points on top of letting the Murakami reinforcements get a free moce is cruel. I hoped that perhaps there is an undiscovered trick.
