Since Airi Momoi's conquest guide is currently the most updated conquest guide that I can find but still quite a lot of stuff is missing. Therefore I've decided to fill that up
Purple: can just do it auto
Blue: easy
Green: not that hard but needs effort
Yellow: needs a decent push to win
Orange: hard
Red: Very hard
White and red: Japanese Empire difficulty

This map is indeed confusing for new players as weird teleportation can often destroy progress.

Additional information:
For "unpredictable" personality only appearing in matsunaga in this map, I think this basically means it will somehow break alliances or gain independence as vassals more easily although this country tends to be removed early ingame

-Mori: Just easy. Being strong and far from the chaos in the middle of the map means that you can simply expand eastward and southward and ally strong factions like Oda/Hojo/Takeda/Uesegi easily without the -6 debuff. Although somewhere in game a lot of countries will just declare war on you they will just submit some time later
-Miyoshi: Unlike the last map, you are in the middle of chaos and Oda will just spam troops to overtake you. If you choose to abandon your eastern territories you will most likely find Chosokabe preparing to hit what is left of you. Not the easiest available.
-Uesugi: Your primary goal is to take down Takeda. This sounds easy as Takeda should be busy dealing with Imagawa and later Hojo troops. However if you reach renowned in prestige then Oda and Hojo will declare war on you. Though they are both busy with other factions I ended up being overwhelmed on my first try ...
-Takeda: You are surrounded by enemies. This is not good. And I doubt if Takeda Shingen is able to compensate this.
-Hojo: Somehow a harder version of Mori. You only need to kill some small countries to get your objective victory but very soon you will find yourself entangled with affairs between Takeda, Uesegi and Oda.

-Kono: You start in the corner but hard to expand due to 2 troublemakers by the name of Miyoshi and Chosokabe which will block your expansion. If you beat both then it's fine
-Chosokabe: You start with a war with Ichijo, and you have a weak Miyoshi next door so should not be that hard. However Mori will be a bit of an obstacle.
-Honganji: Basically same situation in the battles in Owari map ...
-Kitabatake: You need to face Oda sometime in game, but fortunately Rokkaku should give you some time to prepare. But the neighbours aren't much better than Oda
-Rokkaku: WHAT? No one likes to deal with Oda, especially when they are attacking you before you have enough time to prepare
-Oda: Again the protagonist of the game. Lots of gold generals. Fun but should pay attention to Takeda.
-Asakura: Kill the northern Honganji forces and deal with the weak and few Oda and Asai forces coming up. Then kill Uesegi. Not that hard.
-Imagawa: Just no. Tokugawa and Takeda forces will crush you.

-Miura, Uragami and Yamana: Get anschlussed by Mori!
-Ichijo: Try to kill Chosokabe. And that. is. hard.
-Akakmatsu, Hatano and Isshiki: In the middle of major powers. Hard to survive, harder to expand
-Asai: Its alliance with Oda somehow makes it easier, but still Asakura has a very high chance to declare war on you
-Suzuki, Matsunaga, Tsutsui and K. Hatakeyama: Try to kill the other 3 in the list (not easy) and expand (hard)
-Tokugawa: The only easy 1-star in my opinion. Just kill Imagawa and when Hojo declares war against Takeda declare war too then you should be be very powerful as the alliance with Oda should persist with good credit.
-Anegakoji: Being between Uesegi and Takeda is not fun, but Uesegi's chivalrous personality should save you from being invaded. But again expansion is hard
-Hatakeyama: Somehow easier due to remote location, but Asakura will be a hard target
-Satomi, Satake, Yuki and Utsunomiya: Get anschlussed by Hojo!
-Ashina: Race with Hojo to gain as many territory as possible, but then you have to kill Uesegi or Hojo.

Mori: Not easy. You have to cede 2 cities to Hashiba early ingame and Hashiba is blocking your expansion
Hashiba: Just simple. Remove Akechi then Shibata. Declare war with weakened Oda then you shall win
Akechi: Starting a coup against Oda is not fun - especially when you are basically surrounded ...
Oda: Your troops will end up being incompetent against Akechi and lose damn lot of territory...
Shibata: You are fighting a two-front war. Every ET player should know that this should be avoided at all costs
Uesugi: You're facing Shibata's main force by round 1...
Tokugawa: Still easy as you only need to take over some cities, but prestige takes time
Hojo: Somehow like Tokugawa but you need to face the main force of Takigawa

Kono: It was hard against Chosokabe. It will be harder
Chosokabe: Unifying Shikoku should not be that hard, but expanding outwards will be harder due to the mess that will happen directly east of your territory
G. Oda: The Honganji of this map ...
Takigawa: Defeating Hojo is largely impossible without a good list of generals and good economic management, but should be easy for veterans
Satomi: Like Takigawa but worse

Toyotomi: Buffs in prestige + Strong allies = easy game
Tokugawa: Easiest faction. Take down Ishida then crush the western army.
