Some good mods are Extended Timeline (allows you to play from year 30 to 9999, with events and historical countries up to the present day), and MEIOU and taxes, which I've never used but I've heard good things.

You can play extended timeline from 2-9999 but there's a bug in the year 2 which always says your nation is bankrupt even if it isn't

I suggest you try the X10 mod. It multiplies all traditions, ideas etc. by 10. So muscovy will get +500% land force limit, Prussia will get +75% disclipine and the Ottomans will get-330% coring cost (aka instant coring). Its pretty unbalanced but its really fun as well.

I wonder if theorically someone was wealthy enough to own the full collection from CK2 to HOI3 and owns the full DLCs of each... and had ample time to explore every nook and cranny of each game to full extent... how long would that take for him to finish exploring everything before moving onto playing mods?
Just thinking... that's a lot of hours playing all of that when I think of an average save probably takes up to 40 hours, if not more, to complete. O.O

Only major/important nations have flavor in these games. So playing other nations is just normal playing you can get with every nation. If you play as all the nations with flavor, all it takes is waiting until you see every event. Which could take a while, considering the MTTH on some of them, though you could always manually trigger.
