Spam field artillery from Warsaw- you should have enough income to spew out one per turn without capturing any additional cities, while just garrisoning your cities enough so that they don't fall. Manstein will tend to suicide himself by charing straight towards Warsaw for you, so once he and the initial wave of German troops are finished, simply take out Berlin, then Cologne, and move on from there. Note that while taking Riga is nice, it is not necessary, so don't expend too much resources on it.
The real pain in the *Auto corrected* part to playing Poland is taking out Japan, because of the severe lack of suitable airfields in central Asia and the inability to conquer the Soviets, so remember to barf out suitable troops to the east as soon as you have the leisure to. It will also prove beneficial to ship troops across the Atlantic to cut the Japanese off from expanding across Alaska and take Vancouver or something.
Once you face off against the Japanese, remember to spam mines and forts as they will helpe both reduce enemy paratrooper pressure* as well as help waste Japanese firepower by encouraging them to spam airstrikes upon your unfinished forts instead of sending paratroopers over to Australia. Otherwise it will mean yet another annoying ~10 or more turns of having to go there yourself.
Spamming forts also allow you to take out cities without having to ship out dozens of units all the way across Asia, potentially shaving off a decent amount of time, although perhaps more costlier in turns.
*I've found that the AI does not paratroop on top of enemy mines, although I am not completely confident of this fact.
