This is incredibly hard to say as both had tremendous impacts on the world, and the events leading up to both unifications were often influenced by each other. Ill make a little list showing the effects of both:
German Unification: -Resulted in a new large power in the Center of Europe, throwing off the balance of power set by the Congress of Vienna completely. -Resulted in French revanchism towards gaining back Elsaß-Lothringen. -Unification wars led to droves of immigrants fleeing Germany. -The Wars also resulted in new technology being used such as Breech-Loaded Rifles and widespread use of railroads and telegrams in Europe. -The first two effects would ultimately help lead to the First World War, as the powers of Great Britain, Russia and France all aimed to curb German power and France desperately wanted Elsaß-Lothringen back.
Italian Unification: -Resulted in a new large power in the South of Europe, also throwing off the previously stated balance of power in Europe. -Resulted in droves of immigrants fleeing Italy due to cultural, linguistic and economic differences between the Italians. -Italian irredentism, which aimed to take territories such as South Tyrol, Dalmatia and Istria, helped lead to the First World War as the Italian government was trying to gain these territories. -The Kingdom of Italy led to fall of the Papal States, which would lead to the Vatican being created as a state ultimately.
All in all, I would need to say the German Unification.

Well if Germany didnt Unite France wouldnt hate them because Germany ia now the biggest Land Power instead of France but Germany was young but Powerful country but France denied Colonies To Germany aswell Brtian denied them The Countries Like Palpal States Napels etc could rise up to Unite Italy Under Their Control Via Militarism or Even Attack Thr Big Players. ( whoops carried away ) So German Unification Aswell Germany Is A Powerful Country as Extra History said it had Manpower Resources Factories etc it was a "baby country " but a strong one

Maybe the Kingdom of the Two Sicilies would unify it later on, but the Bourbons in the Kingdom did not see unification as beneficial.

Lets take a look at a forgotten aspect of Italy: Africa. Its likely Ethiopia would have lost to any colonial power except Italy in 1894. Following the Ethiopian victory over the Italians at Adwa, Ethiopia became the "Heart of Africa", if you will. Following the independence of all the European colonies in Africa, the colors of the Ethiopian flag, Red, Yellow and Green, became the colors of the Pan-African movement, and at least one of these colors, but usually two or all three, can usually be found on the flags of most African nations (Gabon, Mali, Central African Republic, and Benin, just to name a select few). Now you might be thinking "Okay, because Italy lost against Ethiopia, some flags adopted certain colors, so what?". Well, without the victory at Adwa and the independence of Ethiopia, Ethiopia would not be deemed equal to the other nations in the world by Europe, and thus would not be one of the founding members of the UN nor would it be given Eritrea, which started the Eritrean War of Independence which killed thousands. Plus, the Organization of African Unity is stationed in the Ethiopian capital of Addis Ababa, and, without the Pan-African Movement, the non-aligned movement may not have gained as much ground either. And now you're thinking "So what the **** does this have to do with the Unifications?". Easy. No colonial nations would've been defeated by Ethiopia except the Italians due to the complex political situation at the time., and thus all the stuff I just said would not have happened. Of course, WWI is more important than this, but we should never just strictly look at one war or one event to judge if something is more important than another.
