Why does every battle at a city has to be a fort battle?
It's takes me 7-15 turns just to take care of the forts and I less like not that many turns to destroy their command post.
Any tips

Here are few tips. You don't have to destroy every single brick. Just destroy 1 or 2 tower and move your army through that position. Siege weapon will help you take care of the wall faster with 3x dame to wall. Some OP general who appear randomly in the tavern may help you rush not only few city but few nation. The building only recover about 5% of it hp each turn.

Not to mention isn't it also beneficial to leave as much of the wall intact in case the nation you attacked attempts to retake the city?

Not to mention isn't it also beneficial to leave as much of the wall intact in case the nation you attacked attempts to retake the city? And also if I have a strong advantage in the battle, I try to break through the far side, far as possible from the spawn location to give the AI a harder time trying to retake the city back. (Note, this work best if the fortifications are level 2 and you are in the Empire Age, using the 3 hex range of catapults.)
