So when I get done and get nobunaga should I buy items in markets that cost medals? They seem to be really good items with great bonuses. I could save for another General, but I would rather focus on strengthening the ones I already have

I'd suggest upgrading both of Nobunaga's debuff skills to level 6 first

As kanue said a while ago, the only good purple item to purchase is the lucky crown. The legendary item sets are worthy getting, but You should prioritise this way:
General stars>Good skills( Logistics, Inf,Cav,etc. Commander, Spy and Leadership)>New good generals ( Nobunaga, Caesar, Li, Suleiman)>Legendary item sets>Bad skills/Expansive skills ( General/Marshall, Formation, Assault, Attack/Defense Master)

I have two lucky crowns, I am trying to beat Nordic heroes for paladin ring great item, saving medals for general upgrades

You can consider Paladin Sword. Since you will eventually get the other 3 pieces for free, you will get a 1000 medal refund.
