Hmm did Israel spray oil on their sands to improve their fertility before irrigation? I remember reading about something that they did to help transform some desert lands into arable lands.

Turns out there's plenty of problems if the soil is bad, like salt leeching into the topsoil by the water drops reaching down into deep salty layers underground. Etc.. etc... it doesn't look good. But, Iraq is pretty good for irrigation and has been fertile for thousands of years (it's a matter of using right crops to allow the ground to have their minerals restored such as peanuts). And parts of Turky isn't bad (except for the fact that land isn't flat in Turkey... guess terrances is the way to go).

I wonder what can I grow over there (will search tomorrow)

The issue is not food, though from a military point of view its not Ideal.
Nearly half of Ottoman GDP is agricultural, though this is mostly in coastal areas. (sand is sand) Ottoman does not have much railway, compared to France, Germany, or Russia (Russia 81,000 KM to Ottoman 6,000, france was 25% the size of Ottoman but had over 20,000)
Transportation is thus an issue.
Much of Ottoman food production is peasants subsisting. At least three-quarters of Ottoman food production is used domestically-not exported.
Apparently while Ottoman was very Agrarian (agricultural) it had not really done this whole "industrial revolution" thing.
Western Anatolia (west Turkey) in 1913 employed 35,000 people in manufacturing, or 0.2% of the population. One Industrial company in Italy during world war 1 employed 110,000 people, another (Fiat) had 40,000 people.
Germany had potentially over a thousand "cartels" while west Turkey had 600 companies with more than 10 workers, and 60 with more than 100. These include paper, textile, and food processing.
In addition Ottomans have very little local iron production.
Anyway, I just calculated it, based on Austria-Greece, then Austria-turkey. Greece has 4% the GDP of Austria, and 16+% of Ottoman.
Greece-Romania has a combined GDP of 11% Austria and around 45% of Ottoman. (Romania has double Greek GDP)

Hey Germany? Can you build the Rhine-Maine-Danube Canal like you did a few decades ago in modern day? The rivers can then serve as a mean of transportation and trade. That way we can technically link Rumania to Belgium.
