So I've almost completed the Classical Age and what an epic slog it's been! I've not used the auto option at all as I don't trust it but I can't see me doing any more unless I find a better way.
I played as Greece and thought the game would be over when there was only me & the Romans left as I didn't have the option to attack them but not so, do you have to conquer the whole world every time?
Do you guys use auto and if so when, under what circumstances?
Any other tips to make it a less time consuming exercise without cheating?

For me India (Discovery age) was the main source for literature. Btw, some missions will give you literature as well. I switched almost always to auto playing after I achieved at least 2:1 advantage in cities over my enemies. If only you and your allies are left, they will become your enemies... So, yes, you have to conquer the whole map. I played many ET games, and should admit that EW5 was the most difficult one and the most time consuming one. I was really proud to complete it. I'm sure that other players, who completed it as well (for example, Singlemalt and andrei), can say the same thing. So I wish you luck and literally tons of patience

You can come Diplomacy Screen to declare war on your Allies. It cost you 1 Dip. scroll as making cease fire with your enemies. I never use auto in conquest because AI is very stupid when it control your army, and in my case, it's more time-cosume. The greatest friend of you is high level Logistic skill, it help you make auto combat w/o any worries but be careful when you make and attack near the "Famous" Arti Gen, they will counter at the next turn and you easily lose the battle because your HQ is destroyed.

Destroying the city is NO. 1 priority. If the city falls, attackers win the city in conquest & defenders all die. Yes, even gens who are defedning.
To make the game end faster, try to seize strongholds (~lvl 5-6 cities) & capitals (lvl 7-8 cities). Then you attack the enemy capital (has a crown icon on top of the city).
Be warned, you MUST have a very decisive city ratio to number of cities enemies hold, otherwise, they can still move their capitals. (Eg, Greece takes most Persian cities. Persia loses 2nd last city but still moves its capital to the last city.)

I completed it last night, Caesar gave up when I had pretty much every continent except NA. I tried an autoplay while asleep but it ended in failure, is that normal? I thought I'd read you can farm scrolls with this conquest but maybe it's just my gens aren't strong enough yet? (Alex, Nobunaga & Li Shimin all level 3 + Lincoln 4)

I think that autoplay in this case demands that your generals are at least 2 or 3 ages above Classical Greece.

Well I started and finished Medieval Age in 31 turns over the weekend, and it was a lot less tiresome this time around and felt less like drudgery.
I think the most valuable tip was to go for the capitals, that made such a big difference.

I'm on Gunpowder and have loads of coinage but not very much "metal".

I've never actually seen this resource anywhere else besides the top of the screen. When you click on a city it does tell you how many you get, but it's nowhere near enough for me at the moment! You need quite a lot for recruiting generals from the taverns in this age, and 15 per machine guns and 10 per cannon. I was just checking as it's not unheard of for me to miss something obvious

Playing Industrial as India and turn 1 I got 9 of them, turn 2 I took Vientiane, Dubai & Kabul and then only got 8!
