I was actually testing how effective Marshal rank is, and since Yamashita and the other top tier Infantry gens performed pretty much the same I will be getting Rundstedt.

What I sorely need for most of my stuck contests is a fast moving general that can hit hard so that he can complement guderian/yamashita and take cities fast

Or you could build macarthur into a tanker. Macarthur could have both armored assualt and panzer leader as well as 2 universal skills. He would still be better than patton on a tank

their stars... Stars are not everything! Yup, skills matter more! Arnold is an excellent example of skills mattering more than stars. Despite having 1 Star in Artillery his Level 4 Rumor allows him to be quite effective in that role. He’s not ideal as Artillery, but he’s definitely useful. Same goes for when you place him on a sub. Effective despite having 0 Navy stars. However, the skills must be good enough, otherwise they won’t compensate. This is the case for pretty much every non-purchasable general, excluding the New World Order generals and some generals such as Nagano and Lin B since they have good stars and skills.

We can see as this is perfectly depicted in patton and model

Stars can be deceptive. A five star general would only do 6 less damage, and around 8-10 less with Raider/Armoured assault. Armoured assault does a lot of damage but with one more star, there is less of a difference.

In the case of tanks, however, due to their ability to attack again after killing a troop, you want to maximize the damage via the stars, and thus you should give Graziani and Rokossovsky their 6th tank stars once you have the tech that makes the chance of a tank attacking again guaranteed to occur.
