Here I'll sort the conquests in terms of stars and difficulty.
1939 Western front:
3 stars:
1941 Eastern Front:
3 stars:
-German Army Group South - You start fighting only the weakest Soviet army and Yugoslavia. Deal with the latter asap and enjoy your game.
-German Army Group Centre - Your only immediate enemy is inferior and has most of his forces away from the frontline. After you gain some momentum with economy, game is pretty much done.

1939 Western front:
3 stars:
-German Army Group D - Kill Poland and Denmark, no problems here.
-German Army Group B - You can run over your enemies and hold England with Donitz.
-French Army Group South - Italy has got more troops than you on the frontline, but beating them is easy. After that just go forward.
-Italy Army Group East - Yugoslavia is very outnumbered, no problem.
-Yugoslav Second Army Group - Kill Bulgaria, attack Romania and hold western front. Probably hardest of 3 star countries.
-French Army Group South - Italy has got more troops than you on the frontline, but beating them is easy. After that just go forward.
-Italy Army Group East - Yugoslavia is very outnumbered, no problem.
-Yugoslav Second Army Group - Kill Bulgaria, attack Romania and hold western front. Probably hardest of 3 star countries.
-British First Army Group - No enemies can fight you without winning the sea.
2 stars:
-Danish Army Group - Just win with Bock and swarm the whole Germany.
-Yugoslav First Army Group - Pretty much the same difficulty, just different enemies. Quick offense should be enough.

-Polish First Army Group - You are outnumbered, but if you can manage Guderian, the conquest isn't hard.
-Polish Second Army Group - Use your ally as shield, strike at Romania and Germany.
-Slovak Army Group - Your only immediate enemy is Poland with most forces fighting Germany. No problem.
-Hungarian Army Group - Manage Yugoslavia and Poland. Easy.
-Romanian Army Group - You fight on two fronts, but it's manageable (especially once Juliusz is dead).
-German Army Group A - You face most of the French forces, but start with Manstein and many units.
-German Army Group C - You start fighting only terribly outnumbered Yugoslavia.
-Italy Army Group West - Quickly strike France and they won't be a threat
-French Army Group North - Germany fights firstly benelux and central France, giving you time to collect forces and strike at weathered army
-French Army Group Centre - You face both Germany with Manstein and Italy, but your starting forces can only manage Germany. Still not hard, as you won't lose Lyon probably. Harder than southern France however.

-Belgian Army Group - Your enemy starts with better army and economy. Hard to gain a foothold, even harder to expand.

-Bulgarian Army Group - Strike Yugoslavia with your powerful army and develop economy. Easiest 1 star

-Soviet Fourth Army Group - Very good economy, useable generals and short line of front. Not a challenge.
2 stars:
-German Army Group North - You start with long frontline and mediocre forces with 1 useful general. First shorten your front (probably raid Estonia, try to get rid of border with Soviet Third Army or capture Minsk) and it should be manageable, but not easy.

-Finnish Army Group - Defeat soviet starting army and go forward. Nothing hard.
-Soviet First Army Group - You start with enough units to deal with Finland and northern Germany. With that into your economy, the game becomes simple.
-Soviet Second Army Group - Awesome starting generals and insane starting economy.
-Hungarian Army Group - Take any city from Soviets and hold the eastern front. Use most of your forces to kill Yugoslavia
-Romanian Army Group - It's like Hungary, but you've got less income, less forces and more powerful enemies. Needless to say, it's harder
-Bulgarian Army Group - Your main enemy - Yugoslavia - is way stronger than you. Blitzkrieg it and hope for the best

-Soviet Third Army Group - Your forces are far inferior to your immediate enemies. You start fighting with 3 german armies, Hungary and Slovakia. Your generals are weak. Very Hard, but I'm not certain whether it should be darkred or normal red. Definitely not for beginners anyway.
-Yugoslav Army Group - You may start surrounded, but you also have many forces to work with. Try to hold German front, while conquering Romania and Bulgaria to connect to Soviet Army. After that, just go west.
-Slovak Army Group - Your initial forces are enough to deal with Soviet Third Army, but not enough to deal with Yugoslavia. Create a second army and hope for Yugoslavia not being very agressive at the beginning.
1942 North Africa:
3 stars:
-British Army Group - Your economy is great, you have initial advantage over Italy and the only hard part is killing German AG A. Rommel may prove challenging, but with good general it's easy. Consider helping Greece, unless you don't want to reconquer it.

-French 2nd Army Group - You'll have way fewer forces than Germany and may be forced to retreat a bit. If you are unlucky Italy will go for you too. Greece and Britain will probably fall and that doesn't make your job easier. Not very hard, but very annoying.
-French 1st Army Group - How come the 2nd French AG is so much easier you may ask? Better Economy, Fewer fronts to manage and strong ally make big difference. Still annoying and you can lose some land in the first turns too, but it's easier to get this rolling.
-Italian 1st Army Group - Kill Greece, land in Africa and it's over. GG, you just won!
-Italian 2nd Army Group - War on two fronts, but you have upper hand over France early and after dealing with british army near the border it won't be an issue.
-German Army Group A - Kill Greece and Britain, help destroying France. Simple, but demands some gens and tech
-German Army Group B - Use your starting army to get going. Defeat France and either help your allies destroy Britain and Greece or simply watch them do so on their own.

-Greek Army Group - Taking Thessaloniki isn't a big deal. Taking Italy is a bit bigger. At that point you'll have economy to win Africa almost easily.
