Because the Soviets would save material as well. Only if they would evacuate and it would be better for Germans to have both German and Soviet armies concentrated. Germans would have easier time in encircling them. Case Blue was supposed to conduct an encirclement but they failed due to Soviets getting routed and just vanishing from front of them

Germans would have easier time in encircling them. It is hard to make a breakthrough in the Caucasus mountains, so I don't think the Germans could've done any better. Especially considering that without the Casualties of the Crimean campaign the Soviets would've got more manpower than the Germans from Crimea.
