I guess we can call this a work in progress, here is my list of the countries that are maybe easier than others to conquer with. Some of the countries I played but many I did not, they were selected based on several points. You are welcome to add or take away from the list,or add any thoughts.
These world conqueror 3 countries were selected based on how many weak neutrals are around (to gobble them up),how far to the main battle theaters, their force distribution around the world, nuke capable or not, super tank capable or not and on other factors like how many imminent threats are they under.
Some eras seem to favor sides, this is just an impression. ____________________________________

I found nationalists china in 1950 to be strong for a weak power.

It's probably the same thing EasyTech does with most of these games, makes AI gain large bonuses over player.

Confirmed Iran 1960 is very doable, hard but not too bad,I reached critical advantage in less than 50 turns but its gonna take another 50+ turns to actually complete the conquest.
Critical advantage: is the expression I like using that means basically you already know you won the game you reached the point when victory is just a matter of mopping up the rest if the world, unfortunately this can be a rather boring phase as it can take so many more turns to actually finish the conquest.
I sometimes use autoplay but the ai often does a horrible job at it and waists a huge number of turns doing nothing but pointless movements.

Best75,they were fantastic at 1st for maybe 10 turns? specially the Russians, then all the sudden they all went to sleep for almost the entire game. Now that I am about to win and dont need them anymore they woke up again.I think once their generals die or get low in health they dont want to fight anymore. Europe was not easy to conquer but once that is completed rest of world should be no problem. The US made massive amount of special forces and these infantry are very tough, but super tanks take care of that easy.
Pic above is the last part of Iran 1960 conquest: area A and C still need to be mopped up,you can see some Russian helping finishing up the American continent.I dont realy need them at this point. Shouldnt be long now, this insanely long conquest game is almost done.

I totally agree that the mopping phase is boring. I absolutely cannot count on my allies to conquest countries in the corner of the world (like Australia or Brazil or Hawaii) and it s troublesome to go around the earth to conquest them. So I would prefer playing Allied/NATO just because their enemies are less scattered.

Great Britain is almost always worth playing because there are British troops and cities in many area of the world,so easy access to different battlefields.

I completed 1939 as Italy. At first I did not have enough money to create troops, but eventually I created enough troops to defeat France, Britain, and take allied controlled German cities. I also took Greece and defeat the Soviets in the Balkans. Egypt can be defeated from Libya and so as the French and British colonies in Africa. As soon as the Soviets are defeated, Some Chinese cities are left to be taken. Once India is taken, the longest part of the conquest begins, moving all your troops to Australia. Meanwhile my troops in Britain can invade Canada through Labrador (or Quebec) and also defeat the U.S.

I also forgot to mention that winning 1943 as Italy is also as easy as 1939. For both of those conquests, Japan was the strongest ally.

I'm trying them but Germany just rushes through France and Benelux. As if that isn't enough of a problem is Japan spamming Paratroopers in Siberia which is doublw annoying since there is no Super Tank

Sadly allies have a 10+ turn advantage. So for purpose of unlocking wonders, wise ones will often not pick axis side.
Secondly out of all the allies,Great britain is very good because she is in 3 or 4 different area of the world, this helps in games where completion speed is the target.
