Battle of Bapheus - Roman faction. Even without War Drums, IAPs and Talent Upgrades, it is still doable. Easier than the Ottoman faction despite the Ottoman Empire being the historical victor of the first pitched battle between the two.
Gens used:
- Belisarius and Narses on the starting two, - Reinforcement Robert with Lombardy Halberd, Viking Raiders, and Varangian Guard, - John I Tzimiskes to take advantage of my lvl 8 Khlibanphorous and the lvl 20 special ranged cav unit, - Theodora + Justinian, - Eleanor of Aquitaine with 100 ranged points, - Murad II, - Alexios I, and - Subutai
Seize the two cities. Taking the nearest province opens one Castle summon. Take note to plant your second gen in the nearest province for the morale boost.
Summon your troops. The easternmost castle will block attacks and the central castle is to summon gens / replenish legions.
The game will tell you to smash the enemy vanguard in the centre to rouse our Alan allies to battle. Do so because they'll be hit from the northern city. Leave a rearguard at the easternmost castle within our territory and send the rest to attack.
You'll notice that the main axes are east => west invasions from the northern and southern edges of the map with some advancing in the centre led by Osman I.
I sent Murad with Theodora and Alexios to take the southern city to cut off their spam. Narses and John to help our Alan allies. Subutai swept past the Alan side of the mountains in the middle of the map to destroy the enemy centre with Robert. Then, Subutai and Alexios tried to storm the northern city. Osman showed off his power, destroying Alexios in two turns, but I opened the city for my Alan allies.
The capture of the SE city was the toughest because the NE city's spam and the spam from the city and castle sapped my troops' strength. I lucked out and took it in time to replenish Murad's losses.
Bypass Osman with weaker troops to take the NE city. Using Subutai + Robert, I employed attrition and rained powerful blows on him. You NEED your Reinforcement gen to stay health to effectively fight Osman!
Thankfully, my ally weakened him further and he attacked my troops, getting himself defeated on the AI turn of Turn 16.
Note: Because Osman was the last to fall, I am uncertain if his demise triggers an enemy morale drop.

For the Battle of Poitiers Frankish there is no deploy spot? You unlock Paris or some hidden area by taking Tour or Toulouse. There should be a spot.

Cleared the Battle of Hattin on the Crusader side at last. No Drums, lvl 4 war gears, Talent Upgrades, IAPs or Formations used. I did use lvl 24 scouts and swordsmen.
Crippled the Ayyubid forces using lvl 14 camel riders, lvl 13 war elephants, lvl 8 elephant archers, lvl 11 camel archers, and lvl 6 Mamluk archers. Of course, in order to control for Bouvines, and due to luck, I used lvl 11 Templars, lvl 12 Hospitallers, lvl 17 war axe cav, and lvl 10 Sepulchres.
Strategy was as recommended: 1. Move the Reginald of Sidon (war axe cav gen) out of the way and Guy of Lusignan out of the city. This allows Balian of Ibelin (has Pathfinder) to move to the starting unit without a gen. Then, spawn your preferred Calmness gen on a 1× scout cav (I chose Theodora for the bonus). Use the skill on Balian so that your chosen vanguard will have two stacks of Pathfinders on top of Orban's Cannon lvl 3 or Constantine's Hammer lvl 3 (the anti-cav gear with +1 movement). 2. Move as many gens possible into the adjacent province plus, send your vanguard to the yellow circle. 3. Secure Raymond III with your forward troops, connect the fast group (around Raymond III) with your intermediate troops, and destroy the enemies along the way using the rear troops / those catching up alongside the two knight corps. 4. Send the forward legion to attack the Ayyubid rear to the SE. Only the lvl 3 castle can be taken. The lvl 2 castle in the same province does not have an effect. 5. Protect Raymond III, remaining red targets and finish the remaining enemies by capturing their castles. (Immediate win) However, instead of using the speedy Aetius, I used Alexios I with one movement gem. Moreover, I lucked out with the enemy attacks on Raymond because he would've been destroyed due to his eagerness and need to retreat via the revealed blue halo. My red targets also weren't specifically targeted later on. Gens used in order: - Alexios I on starting legion (should be Constantine's Hammer lvl 3), - Subutai with the Tang charge cav, Mongolian Raiders, and IBC (lvl 3 tent), - Theodora (should be anti-cav defensive gear lvl 3) on 1× scout to be stacked later, - Justinian on swordsman to raise resources, - Gao Xianzhi on 1× scout (should also be anti-cav defensive gear lvl 3) who played a possibly key role in reducing the number of enemy attacks and weakening them, - Murad I (probably the Rhinocerous lvl 3 otherwise, the anti-archer lvl 3 gear) on 1× Teutonic Knight and 1× Hospitaller, - Antonina (probably the anti-cav defensive gear lvl 3). A spam of 1× swordsmen due to having excess population and coin production. You need to upgrade the NW castle to lvl 3 and the nearby lvl 1 castle to lvl 2. These allow you to summon gens in time. Defeating Salah ad-Din leads to an enemy-wide morale drop. Might be needed for an S-rank clear, but uncertain. I got away with just 6 red targets left. Might be needed for an S-rank clear.

2) For tearing down the city wall as fast as possible, Who is the most suitable general and which gear is the best?
3) Does hybrid generals, for example El Cid, is good. Or pure general ( ex: Edward is archer gen) is better?

Thanks for your ideas. 1) I don't remember if anyone did attempt to get an S-rank clear without fulfilling the secondary objectives at the same time, but for a first-time clear, do both. For all the first-clear rewards, you need the secondary objectives to be cleared. For the daily reward, you need an S-rank clear at least once. Each side has its own reward. 2) Orban's Cannon is the best. Unless you're cracking something very tough, even the common Constantine's Hammer, Rhinocerous and Rocket Shooter should suffice. 3) Both have their advantages, but gens with skills for their specific class will benefit a lot more from a pure set-up than a hybrid set-up. I think without having both Inf and Ranged Tactician skills, he would've lost out on some atk power by sacrificing one class. I can't remember if these debates were resolved.

You don't need it since the corresponding gen's unique equipment is far away, but you can try Manuel's Hero Legend in Hard mode for the best sweep.

Battle of Bapheus - Ottoman faction clear. No Drums, Talent upgrade or IAPs. No lvl 4 gears. Only lvl 3 gears. All tier 1-2 troops are lvl 24, and the rest of the troops are lvl 20 or lower. Gens used: Justinian + Theodora, Murad II with Interlaced Formation lvl 5 (Detour + Dodge up), Nevsky with Wedge Formation lvl 3 (Charge dmg up, boosted by gen's cav points), Alfred with Interlaced Formation, Alexios I with Interlaced Formation, Subutai with Single Line Formation (Range dmg up, boosted by ranged points), Gao Xianzhi with Interlaced Formation, John I Tzimiskes with Wedge Formation, & Reinforcement Robert the Bruce with Interlaced Formation.
Strategy: 1. John and Justinian to hold the northern city. 2. Murad and Alfred lead the way to the lvl 5 city, followed by Osman I and any troop that can catch up (form one line along the border of the blocked region). Other troops to defend the northern city. Gao tried to join, but was cut off and forced to assist the northern city. 3. Subutai, Alexios, Theodora, and Nevsky to attack the southern city, then the SW city. Nevsky, being slower, will destroy the enemies approaching the SE city along the way. 4. Robert will hold the NE city. Later, he would engage in a duel with the reinforced enemy commander. He would switch from a lvl 3 Rhinocerous to a lvl 3 Medical Tent due to heavy dmg sustained. 5. Build houses and workshops. Start to spam the swordsman and rotate with spearman from the northern city. Only summon a 2× swordsman to guard the NE city. Also, equip practically everyone with defensive war gears.
6. Besides Alfred and Murad, the rest of the northern wing were destroyed. However, the two took the lvl 5 city. Spam swordsman to block the incoming Alans and East Roman troops. 7. After a bitter fight, the southern city is taken. Subutai and Alexios advance whilr Theodora supports them. Nevsky and stragglers to hold the southern city. 8. Hold the northern city by defending the tiles to its immediate left. Gao fell.
9. Clear out the Alan troops and pass Alfred and Murad through the city to recover troops. Send both northward once the coast is clear. 10. After another bitter fight, the last Roman city (SW city) falls. All Roman troops suffer a 1× morale drop. 11. Alexios and Subutai to recover, clear out the approaching enemies and launch a 2-pronged attack: west wing to attack the Alan city and clear enemies along the way, while the east will clear the remaining Romans (with Theodora + Nevsky's aid). 12. By now, Robert was badly wounded. Switched to a tent. A 3× (2 healthy and 1 damaged) swordsman legion held the NE city.
Note: If the enemy defeats an allied legion, they gain resources. I don't remember if the same happens for us. Also, I took long enough that I earned about 500 coins per turn, easily meeting the secondary objective. Byzantine Hoplites were at lvl 1, Flamethrowers at lvl 4, Klibanophoros at lvl 8, vs Camel Riders at lvl 23, Mamluk Archers at lvl 14, Camel Archers at lvl 18, and Sipahis at lvl 8. Restrained the Roman troops greatly to gain a massive advantage over ET's buffs.

Battle of Bouvines - French faction. Comments on Bouvines: The themes for this battle are: 1. Don't lose any cities or your lose immediately (including the English right wing when playing as the HRE). 2. Don't lose the main commander. 3. Wipe out the enemy. 4. Ironic. The HRE faction is way easier even though France was the historical winner. (Resources at the start vs not enough, resources per turn vs not enough.) 5. England is the weak link. 6. Feels much more chance-based compared to Bapheus (which comes after), and more annoying compared to the Crusaders at Hattin.
Resist the HRE-English charge! Save the King! Arrange your men as such. The 2-unit commander on our left will get a Frankish Axeman from the castle and draw the English in. The rest to hide by the city. I sent Subutai out, but it was risky. Doing so also lured the cav gen to the south of the inf gen. Without Subutai's movement in this picture, he would normally circle northward and attack the city directly. You MUST arrange a blockade of the southern city. The enemy will crack its defences easily and so backup must be prepared. Place the King ahead so that he'll take the hit and be forced to withdraw early. Since I didn't risk him, I stripped him of his troops. Also, since Murad II attacked via the middle passage, the way to Justinian at the rear was blocked. Thus, Justinian's legion can also be reduced. All cities to have Workshop lvl 2, and at least lvl 1 Housing. The frontline cities can get lvl 2. The goal is to quickly raise our population capacity to get as much taxes as we can. We needed every one. Also, equipped main gens with lvl 3 defensive war gear, except Narses (anti-cav Steyr Cannon at lvl 3), Reinforcement Alexios I (Rhinocerous lvl 3), and Subutai (Rhinocerous lvl 3). Equipped some common troops with lvl 2 defensive gear as well, specifically those around the hanging centre (central castle) and to the south. Because the King moced southward (easier to get to the retreat spot), that probably caused King Otto IV and his centre ro cluster with the HRE left.
Hold your ground! Montjoie Saint Denis! (Actually claimed to be used at Verneuil) Although in this run the melee cav gen circled the English wing and hit the centre, we still throw our northernmost troops to attack their city. This usually features Robert and the other inf legion. Collapse the English forces and take the coalition's right wing! Hold the centre, Murad is here! Resist any who move against the centre. Although Murad took heavy losses, he recovered them in the castle. This should stop the enemy from moving to our rear. Continue the bitter fight at the south. The reinforcements from the southern castle should be here, throw them in. The King should be safe. You may move him to give extremely close troops a morale boost. Otherwise, keep him away. Note: Unsure when, where and how the French knights are summoned (about 4 legions). Might be from after getting horsed + the King stays in the yellow halo, located around the King's original position at the start, and triggered by the King being knocked from his horse and retreating. Defeating all the reinforced knights (mostly melee cav, Teutonic Knights) will lead to a dialogue event. Missed it. Seemed to have no effect. Also, max out the Housing + Workshop if not done. Recover legions and swap exhausted troops out. You MUST hold the south. Also, watch the north.
Route the left, isolate the centre, and smother the right! Let's win this fight! Follow the instructions of the earlier phase. Now, our left has smashed the English advance and counterattacked by taking the English base. Move to attack the centre base with a screen to block troops from the NE base. Remember: Occupy enemy castles before taking the city. They may spam troops and hit our backs if we fail to do so. The grind has gradually emptied the diverted centre and the compressed south. Central forces to flank the southern cluster and support the attack on the central castle. Continue to hold the south. You may spam 2× swordsmen here or at the captured English base, as needed, as long as you can afford them.
King Otto IV has fled, charge them! Destroying the King's legion leads to an army-wide morale collapse. Take him down first to maximise your benefit. Now, wipe out their main forces, storm the centre, and finish the coalition off! The glory of France shall reign over the battlefield and Europe!
Victory is ours! The Oriflamme was unfurled: take no quarter and wipe out the enemy! Regroup the south, and send all remaining men in. The King can lead the charge. Take the centre and split up to take the NE and SE cities. Hurry before time runs out. Glory to France!
Tiers 1-2 troops can be assumed to be lvl 24. The rest are about lvl 20 or weaker. Two-handed swordsman at lvl 13, Teutonic Axeman at lvl 12, and Teutonic Knights at lvl 14 or 15. However, Noble Cav at lvl 20 (used by both sides), Heavy Lance Cav at lvl 20-22, Norman Knights at lvl 16, and the worst of all, Hussars at lvl 8. The Hussars crippled Murad II. Frank Axemen at lvl 21. Other troops were available in the castles, but I did not use them.
Gens used (north to south]: 1. Reinforcement Alexios I. Legion is lvl 14 War Elephants, lvl 18 BAG, and lvl 14 Hengdao. Lvl 5 Interlaced formation. 2. Robert on the 2× counter inf legion. Lvl 5 Interlaced formation. 3. Theodora on the full range (ranged cav + 2× ranged inf) legion. Surprisingly no pre-set formation and not used at all. 4. Subutai on the 2× ranged cav legion (with Noble Cav added later). Lvl 7 Singe Line formation. 5. Harold Hardrada on the 3× melee inf legion. Lvl 5 Interlaced formation. 6. Justinian on the 2× melee inf legion to the rear (one will be removed). Lvl 7 Single Line formation. 7. Murad II on the mix-cav rear legion. Lvl 5 Interlaced formation. 8. Narses on the 2× counter inf legion. Lvl 7 Single Line formation. 9. Belisarius on one of the mixed inf-melee cav legions. Lvl 5 Interlaced formation. 10. Timur on the Elite counter inf + 2÷ ranged inf legion. Lvl 7 Single Line formation. No drums, IAPs or talent upgrades.
This is my final Epic Battle fight. Now, all 8 battles across both sides are complete with Secondary Objectives cleared and S-rank clears.

I actually was afraid I can't even hope for success with such troops on the Ottoman side (mostly lvl 0), but Formations did wonders
